250g SR flour, 11/2 tsp ground ginger, 100g butter/hard marg, 350g castor sugar, 1 egg beaten
In bowl sieve the flour and ginger. Another bowl cream butter or marg with sugar then beat in the egg. Stir in the flour and combine well. Roll the dough into walnut size balls and place on greased baking tray. Oven temp 150 C/300 F/ Gas mark 2 for about 40 mins until crisp hollow and lightly browned.
